Digestion in the stomach

The digestion of proteins begins in the stomach. The gastric juices contain the enzyme pepsin along with diluted hydrochloric acid, which activates the enzyme from its precursor, pepsinogen. In the experiment, boiled fish is added to test tubes with water, enzyme solution, hydrochloric acid plus a mixture of enzyme solution and hydrochloric acid. In order to simulate the body temperature, the test tubes are placed in a large glass beaker which serves as a simple water bath. After a few hours, it is clearly evident that proteins break down only in the preparation with both pepsin and hydrochloric acid.
