Principle
In this experiment, students observe the cooling of a wet thermometer and a dry thermometer in air. They notice that a wet thermometer cools down even further in the air and that there is a clear difference to the dry thermometer. From this they conclude that the evaporation of water has a cooling effect, which extracts heat from the thermometer and thus further reduces the temperature displayed.
